Plants produce ethylene gas when they are damaged. Ethylene gas is a natural hormone produced by plants, and is involved in the ripening of their fruit. It is also used in agriculture to force ripen fruit. This is also why you can put a ripening banana with an unripe avocado in a paper bag to speed up its ripening process!
